How to change the color sets for all equipped gear
I did this last night. I had an option to apply to all but today now I can't find the option anymore?

Open your character screen. Press "S" to go down to the cosmetics section. Right-click on the icon on the upper right side. That will take you into the appearance and/or transmog section. From there you can experiment with colors for your entire outfit.
