Probably don't delete your characters. Not a good idea. Materials are account wide. So even if you delete your Hunter, your Titan and Warlock will have them in the Invent
I would start with Legendary Edition. Then if you are done you can buy Beyond Light Deluxe to play last seasonal content as well but only if you are interested ofc. Witch Queen comes in february 2022 so no need to buy it now.
Btw when you are kicked in the game quit out the mission and start forsaken. There's a bug when you start with 1100 power level in the mission kokon and get totally wrecked by everything.

No problem. To make it clear. We have season 15, beyond light deluxe contains seasonal content from season 12-14. This mainly contains events and quest, access to certain weapons etc. The normal edition of beyond light which is included in the legendary edition only gives access to season 15.
The closet you can get is delete all items in your inventory and vault that the game will let you, create a new character and then delete the original one. In this case you'll keep any currency (Glimmer, Legendary Shards, Bright Dust) as these aren't physical items and you'll still also be able to pull a number of items from your collection.
That said if you haven't played in a couple of years the vast majority of gear you have will have little to no use anyway. You may as well just star a new character and play through the New Light introductory questline. If you want to catch-up on what's happened storywise in previous campaigns/seasons there are plenty of videos to choose from.
