If you feel like mobs are too easy, go solo Nightfall or one of two Dungeons. It's possible, quite challenging and fun. Then you will maybe understand reason behind light levels.
Basically you have to repeat all content a thousand times in order to grind bounties/catalysts/exotics/Flavor of the month/Meta equipment while also changing your purples for blues in order to increase your light level by 1 or 2 each time after you reach 1000.
Guess it's faster before the hardcap, but damn, this system annoys me.
Power level give some good advantage at PvP (disadvantaged enabled)
Some mission strict by power level
Some mission difficulties strict by power level too
Your weapon deal more damage, but armor i think just change slightly
The reason you aren't feeling like its important is because of how Bungie handled New Light, where they made pretty much everything before Shadowkeep power 750 (when before it ranged from 10-750). However, there are still several activities that need a higher power level, one of the biggest you have access to is Nightfalls. Nightfall: The Ordeal has difficulties going up to 1030, for example.
With New Light and the starting level being raised to 750, you don't get that same feel of progression, of feeling weak against certain enemies, and then finding you've got the advantage. You're overlevelled for like 95% of the game's content so you're at maximum possible advantage in all places except parts of the Moon. But there are places where power is very important and being low-powered will definitely hurt compared to when you meet or exceed the recommended level, and those are,
Ordeals, Hero difficulty and above,
Nightmare Hunts, Hero difficulty and above,
Nightfalls,
I believe Garden of Salvation has a requirement in the 800's,
Also there are some PvP aspects where power level matters, like Iron Banner, Trials of Osiris and the PvP portion of Gambit.
As well as this, New Light your power gains help unlock the legacy activities like Forges and Menagerie, you need to hit a certain level before you get the prompt to access them.
Yes agreed, New Light has confused a lot of people and a lot of things are very poorly explained.
Also, try searching r/DestinyTheGame for the new player guide somebody wrote back during Shadowkeep. It was pretty thorough.
Edit: just a minor correction to the above post, the light level requirement for Garden is 940. Anything below that and you're doing less damage.
