What does the Black Armory Sigil stand for?
I know that the 3 symbols each represent one founding house of the Black Armory - Hand, Fishook and Butterfly.

These houses are 3, from each country one, and each has their representative weapon
Norse - Jotunn
French - Le Monarque
Japanese - Izanagi's burden

I'm most certain that the butterfly represents the French house, because of the "Butterfly's Grace" quest name, but I can't seem to find out which house is represented by fishook and a hand

haven't completed it yet, but if it does, then it's kinda obvious and you've found answer to my question

As well as that, Izanagi's Burden has fish on it.

Pretty sure japanese is fishook since fishing has been part of their culture since long time ago.
That left The hand for the norse, not sure why it is a hand tho.

Thanks guys, figured it out, now my goal is to figure out why they chose these symbols, the fishook makes sense, but butterfly and hand? Maybe Jotunn as a hand of the god or something? Very unsure about the French and Norse ones
Well if it's Butterfly for France maybe it's do do with that old safe cracker story about Henri "Papillon" Charrière, and Papillon is French for Butterfly, only thing I can link together.

For Jotunn there a race of giants from old Norse stories, I have this game called Jotunn.
