Any way to download the demo on Steam Deck?

I couldn't find it too. Even going through news and link to demo it showed me full version. I switch steamdeck to desktop mode and then there was working button with demo. Still downloading so I cannot tell you it will work (but probably why not - full version is supported)

Developers often remove demos when a game is released because demos reflect a really, really old version of the game that doesn't reflect recent improvements.

Not sure if it's true. On this case you can download demo at normal steam client on pc but problem exists on steam deck. There is missin UI button to click (but as I mentioned, switched to Desktop mode on Deck and here it is). If it would be totally blocked on deck then probably steam client on desktop mode would now too that it should skip this button because it is probably known for code from what platform there are requests to the server.

Oh... and can confirm that when download was done in desktop mode I switched the deck to normal mode and run it. It works !

In this case it was reversed. In one of the after release developers diary they talked about the demo was not ready for release until after the full game was. The full game was released on July 14 and three days later the demo was released on July 27, 2023.
