You need to increase the knights stats.
I'm assuming you are max level so use Alchemy in the Human reigns "slums" area to brew stat increasing potions. New Game + and beyond expect you to start using it. I learned this the hard way with the same exact boss haha

thanks ! , How about a weapon and I still use a mithril spear, any good weapon recommendations?
