Or you can force a pregnancy with the Red Rings and recruit them with a Breeding Contract: Goblin.
Or gift them a Ghost Veil, let their city be sieged and rescue them. Typically you need three hearts before a Princess will go with you during a rescue but the Ghost Veil bypasses that restriction.

From my experience, eloping works for every princess who are sitting on thrones.
Just to make the things a little more correct, the hearts requirement varies to each princess. For example, I think MouseP don't need any heart, GoblinP need only one, and HarvestP need three.
To get the hearts, usually you get them doing the throne conversations and choosing the right answers, but this doesn't work for every princess. For example, InsectP will not continue the conversation until she destroy Human Kingdom and Insect Kingdom goes to the surface, so you can't get the required hearts in that way without destroying the Human Kingdom.
There is an alternative way to get hearts. Through Alchemy, you can do Love Potions and give as a gift to the princess on throne to receive +1 heart.

As a faster alternative way, you can do the forced eloping. So you will not need to have hearts, just get the princess pregnant and force she to step down using the Goblin Contract.
Like was already said, you can use the Red Rings to "remote inseminate" the princess, but that can't be used with princess that doesn't wear panties (Plant, Mermaid, etc).
Another way is going next to the sleeping princess without wake her and use a sleep powder. This will narcotize her and let you "do something" with her. (But, as said by the game... "What a shame for a knight")
After the princess get pregnant you just need to wear the Goblin Contract when she gives birth to her heir.

The normal/forced eloping can't be done if you are using Prince Knight trait, because you can't sneak the throne at night.
