I have a feeling there're probably a lot more in store in the future, the current game version is 0.19
0.19, not even 0.5 yet, I mean, assuming the game keeps getting developed all the way up to 1.0, it's reasonable to think that there may be more down the line for the Knight. Hell by the final version the Knight may not even be the main character.
Yeah Harvest Princess is Nonbinary and can physically transition at will with the bell.

It sure can. And when you try to use it on the Knight it says that you can't do it YET.
Implying that it may be a planned feature for further down the line. Possibly just a concept now, who knows, but it's on the table.
Sex and Gender aren't the same thing, recognizing that has nothing to do with being trans.
Why not? A person who's born a girl but identifies as male is male gendered, and that same person can transition, what difference does it make if they transition with HRT and surgery or use magic?
The only reason we don't use magic to transition in the real world is because magic isn't real.

You made your request, and were told no. Not only were you told no, you were told why not. And there was even a message quoting the developer that says no.

HRT changes a lot more than just how you look, you can be weird about sex if you want but after a few years on it you wouldn't be able to tell the difference between a lot of people who transitions and people who are cis.
Harvest Princess is literally non-binary.
Harvest princess identifies as both male and female. Being Non-Binary isn't a mental disorder.

For example did you check the version number of the current build? It's 0.19.
And did you try to use the Cardinal Bell on the Knight? If you do it says that feature hasn't been implemented... YET. Implying that it may be implemented in the future.

And just because something is implied, does not mean it's going to actually happen. Check out an earlier post that links to the dev saying No, the knight is a man, period.
That's what I tried to do, but you immediately went to insulting and making my idea an issue just because you felt like saying no because it wasn't your cup of tea. Other people engaged with the idea and gave me responses based on dev comments or in-game evidence, that I'm happy to discuss with. But you are the one that derailed this discussion board.
My opening comment was a response of no, the knight is a male. Period. Anything else wouldn't make sense.
Get your timeline in order.
