Ouch the performance would be a killer on MP server.
Epoch did experiment with a large rock like antagonist called the Construct, but believe was shelved due to performance issues.

I believe there are dinosaur mods but they use raptors mainly not explored it but they may have larger dinos.
It can be done like most things in Arma 3 it is a Sandbox; but to play with it on a live public server is another thing altogether.
