As in the type of round that they fire? If so, you just need to have 2 types of rounds and you will be able to cycle between them in the action menu.

Make sure you have your grenade launcher selected, then use the scrollwheel to select grenade type- you can also drag and drop the grenade you want to shoot from your inventory into the grenade round slot of the inventory, below your gun and next to the magazine slot.

*bzzzt!* Wrong! That switches between Semi/Burst (if available)/Auto/Underbarrel Attachment (GL, 3GL or the Type 115's mini-50), not between the Underbarrel Attachments themselves!

*bzzzt!* Also wrong! OP has to choose the correct weapon for the rounds!

*ding!* Correct!

To "switch" between the actual grenade launcher types, you have to pick the correct weapon that can handle the rounds you have.

For example: the MX 3GL can accept 40mm grenade rounds as well as 3Rnd 40mm grenade rounds. All the other launchers can only accept the 40mm grenade rounds.

Yep, the MX GL is based on a Metal Storm prototype GL, and it's the only one that can fire 3 GL rounds, but the rounds themselves are really rare, I think maybe only 1 or 2 units have them by default- all other grenade launchers can only fire single rounds.
