Honey select basically has no story at all, just several rooms for sex, and almost no gameplay exept for pose changing and some "emotions" mechanic (you can make them like you or hate you or break them morally, which affects their face expressions and voices).
The mods are harder to add (and especially to remove), and they can often conflict with one another (even the ones for clothing parts and other stuff like this (and this happens often, when you have tons of clothing parts from mods))
Here you have full-fledged long story with several girls, but you are free to finish it with your own pace and have affairs with other girls.
You can have sex on any location here (if girl likes you enough), and there are much more locations than in HS. You have to please girl right to enable all poses and all holes for sex.
Here you have dialogue system to talk with any girl and make her like you (or hate you), and dialogues are differ depending on girl's personality and parameters (in HS there is no dialogue system).
In HS there is realistic visual style, in KK there is anime visual style.
If you want realistic haracter style and character editor only, I recommend Play Home. It's slightly improved from HS in terms of graphics and characters there look a little better compared to HS (but it's a really slight difference and hard to notice).
Applicatin for posing and creating scenes is available in both games and is called "studio" (but you need to add it in this version of game manually, It comes as a free separate dlc and needs separate translation by patching).
You can use different poses and animations for your character in built-in editor too (it's fully translated (only in this game) and embedded in main game) in both games. You can use different 2-d backgrounds in editor in Koikatsu (but not is HS as I remember). And of course you can make screenshots in editor in both games.
About cards - that's how saved game characters data (that you make in editor) are called. It's embedded to a png screenshot of a character. This system is used in all Illusion games. (But cards froms different illusion games are usually incompatible, so you can't load a card form HS to KK and vice versa).
It's really convinient. You can post your saved character's cards anywhere, where posting of images is allowed and anyone can just save this picture and drop it to charater folder to play this character in-game. No hassle with downloading some save files from some sharing files, the png card is all you need.
Though if a character uses some foncy clothes or hairstyles or other stuff from modders you need to download these mods separately (they are usually listed by the creator of card) in both games.
KK is more convinient in this, because it has huge pre-made packs of mods (installed with HF patch), so in most cases you don't need to bother finding single mods for each card.
Also you can have any amount of clothes, hairstyles and other mods without them conflicting with each other here.
Also it's much easier to add sideloader mods - it's always a single file you need to put (or delete) to mods directory.
In HS you need to unpack the achive with the mod into main game, and to delete it you need to find and delete all it's files manually (and restore the files it has overwritten too).
So KK is more mods friendly than HS.
Or just original japanese HS + japanese dlc's + HF patch.
You can also add like up to 60 side characters atop of this with mods, but it will eat a lot of ram and increase loading times.
And of course you can edit your character. Or even play as a girls with a "secret" (with the mods).
Its likely not on Steam because the character editor can make women that are petite and young looking.
Maybe you should wait for them to bring Honey Select 2 here, they are working on it for quite some time already.
