What is the best amount of squares to plant crops in per 2 workers in a farmhouse?

depends on how much you've upgraded their work speed, but you can make pretty big fields if you change the prioritization to planting, so that they replant what they harvest as they go

I try to keep it under 30 tiles per 2 farmers though

A single beaver can harvest and replant 8-9 plants a day. For carrots that means 32-36 plants per beaver. For potatoes that means 48-56 plants per beaver.

Yeah, beaver being able to harvest and plant a rough total number per hour then you multiply that by the number of beavers and then by the number of days the crops take to grow. So if you had a beaver able to plant and harvest around 8 per day you'd want 8x4x2 total crops of carrots that the 2 beavers could maintain without excess sitting around.
This is of course depending on if you plan to grow through dry seasons or not. If you don't grow during dry seasons then having much larger fields that you spend a few days harvesting all at once as you go into dry season could be a different matter.

What I do, to keep it simple, is make a field that is obviously larger than it needs to be and just wait. Prioritize planting over harvesting. Once the first harvest comes in, they'll take their time replanting each crop after harvesting and won't get through them all before the closer ones start to be ready for harvest again. You can then see the distance your beavers can optimally work. From there you can either erase the superfluous crops or just add another farm.

I'm currently running 4 farms and it is more than enough to keep an abundance of food for my 70 beavers, providing carrots, cooked taters, and bread to the whole population.

Sounds like I am under building. So far I have been going 1 8x8 field per farmhouse but it sounds like a single farmhouse with 2 workers can probably handle 2 8x8 fields instead, possibly a bit more?

from what i've seen from watching videos of the demo version it seems to be best if you have 2 farmhouses set up for one field. one set to plant and one set to harvest. then they can cover a larger amount of space with the 4 beavers. just make sure you pay attention to the AOE of the farmhouse so you don't go too big with your field and not get crops that never get harvested.
