Pine trees + I think it's called a sapper building.

Pine trees will start growing resin after they're fully grown, similar to berries.
To harvest the resin, you will need a Tapper Shack, under the Wood tab.

So if you leave trees alone for a while they will start producing a secondary resource. Pine will grow Pine Resin, Maple with grow Maple Syrup, and Chestnut with grow Chestnut Nut's. For Pine and Maple you will need a Taper House. For Chestnut Nut's you will need the simple gathering post. The one you used with the blueberries. Chestnut's would need to be cooked in order to be used, so you need to grill them, Maple Syrup would need the Bakery to make Maple Syrup Treat, and Pine Resin is used in another wood refinery along with boards to make coated boards which only work for certain items in game.

the tapper will also get maple syrup from the maple trees.

the basic gatherer gets nuts as well.

Does the tapper shack need to be located next to the pine trees? Is there a pine-resin-gather flag required to have your pine-resin-employee start gathering? Do you need to select (in a similar way to selecting which trees to be cut) which trees to gather resin from?

The reason I ask is that I built a tapper shack but never saw that I accumulated any pine resin. Maybe I was being too aggressive with lumberjacks cutting trees?

I'm facing the same problem... I have the tapper shack, but can't collect resin =(

They need to have Pine Trees within their range for them to collect said resin.

tapper building will get resin and maple from fully developed trees. the game tells you how long the trees will take to grow and then how quickly they develop pine resin (pine tree) and maple syrup (maple tree)

chestnuts (chestnut tree) are gathered not tapped.

If you have space, set aside a group of pine trees that are not marked for the lumberjacks. Set up a tapper's shack very close, like right next to the trees, in the middle, or right across the road. Click on the shack to have them work on pine trees specifically. You will also need a place to store the pine sap when it's been collected, because the tapper's shack can only hold so much. After that you can use the pine sap for more advanced building projects.
It's kinda like berries, you have to let the tree fully develop and THEN it will START producing sap. But if you just harvest the sap you only need a few trees because they will keep producing.

you need some space between each pine tree for them to produce sap the most efficiently

I sure as hell hope not, that would be suuuper inefficient for wood gathering :O
