For feeding them: feed them dragon meat, as the rest doesn't give as much satisfaction compared to the purple bar increase.
You will want to go and feed them after every dungeon you do. I always went back once I reached the save point just before the boss. For the larger dungeons I went back twice, but I'm not sure if its needed as I've never seen their mood go beyond yellow.
Don't worry too much about the purple bar as long as you keep them fed. It only matters if its maxed out or not. Entering CH11 at 30% or 90% won't make a difference.
From what people say harvesting items/destroying rocks etc or lots of movement decreases mood the most, rather then defeating enemies. So, if you go grinding don't bother with the harvest points etc.
Remember that mood goes from (iirc) blue->green->yellow->red-> purple. Unless its purple it doesnt really matter. Just means you'll have to use more food and get more purple bar that chapter.
Also, if you are worried enough that you'd restart the game then its better to finish and go for normal or bad ending first, as those add to the experience as well.
Doing a second playthrough should be very fast since you can just boss rush the dungeons and skip all events.
Doing NG+ now and it seems movement doesn't affect their mood at all(or veeery little), combat a little (?), and harvesting/breaking stuff a lot.
At CH7 now, and the only time their mood actually changed was after harvesting/breaking about 2 dozen things in a test (went from blue to yellow).
So...if you never harvest or break anything it would be super easy to prevent them from going mad/dragon regardless of how much you kill.
Now about madness, seems the health or number of turns in the fight affect the madness gain in party defeat. When i did the same boss i go from 10-15% to 50% after lose to it. In my second try and cause i did a mistake i lose in turn 3 ... only got 1% of madness. Maybe later will check what is more important in madness i think is turns, like the hunger of little sisters.
Guess I'll skip this one until somebody makes a mod to freeze it.
You can kill and grind on monsters as much as you want.
For reference I got half my party all the cores(kill every monster 3x+ including rare ones), harvesting all the maps fully cleared everything, and ended up at 70% of the bar in the end. That was on hard.
Without the unneeded harvesting you'd be looking at something like...20-30% at most maybe. And that's not even optimal, but if you really take your time.
