You can fix it later with Ex-cubes so don't worry.
Down the line when you climb towards Level 50-70 (and further when you are Level 70+) you will get ten-star weapons that you don't have a need for. You can use the Swap Shop and convert those into Excubes and purchase Mag Level Down devices so you can level down a stat you don't want.
An impure Mag isn't the end of the world but depending on what you leveled up, you're looking at 5 Excubes per Level Down device. In my attempt at raising a Mag to get both "Support / PP Recover J" and "Support / PP Recovery J" it cost me about 200 Excubes to level down about 40 levels of stats I did not want. If the grind for Excubes is too much because your character is legitimately missing 200 points in their main stat (so for example you can't equip the end-game weapon you got at Level 75 because you're short on points), a brand new Mag will cost real money (300 AC, which is $3 USD).
The bar for the Mag's levels only show you how close you are to leveling up. To actually level up the bar has to be filled up so depending on your class (and the type of Mag you want to raise) you can completely skip this using Food Devices (it takes 502 Mini Food Devices to go from Level 0 to Level 200) or take a look at the items you have to make sure you can level down stats you don't want and push only the stats you want.

A Level 80 subclass cant do that.
You need a mag.
Every Mag level gives you a point in that stat.
Items unless dex for low level tech disks etc shouldn't be used for food. It's just a waste.
Don't sweat it if your mag isn't perfect at the early levels, it can be fixed.
To keep DEX levels down:
If you level up Melee damage, use Monomates.
If you level up Ranged damage, use Dimates.
If you level up Technique damage, use Shifta or Deband Essence. Trimates are more expensive.
Also, if you want to skip the waiting game of shoving 9* weaponry into your Mag, the Food Devices mentioned above are the best thing to do. They are exchanged with Photon Spheres, and even if you will need some to upgrade weaponry the best early investment is there.
You can get Photon Sphere as easily as Excubes, as it is the same exchange.
Pros;
-You can use them an unlimited amount of time without pauses unlike when you feed a weapon to a mag.
-There's ABSOLUTELY no way to ♥♥♥♥ it up. unless you accidently use the wrong device.
-10 stars are ridiculously easy to come by if you use a Triboost and boost rarety up before an EQ.
Con;
-Your mag dosen't get any energy since it's technicly a device, not a food item.
-Pretty much limited to one incomme source of Stat growth.
-Won't get any/much crafting parts or affixes for your weapons/gears
My advice for new players is to do the quests until you get the one that gives you 50 of each, shove the desired attribute into your mag to get a early boost, Then just work your way up until you can do Emergency quests and do your best to boost your drop rate.
It's pointless to have tec-atk if you are a ranged character. Focus on single stat, rng-atk, melee-atk, tech-atk. The defense stats(E.g tec-def) are not useful at all due to the minor gains and only cover one defense type as your main defenses are dodge and the unit equipments. DEX stat is only useful for specialized builds using bouncer, braver or phantom classes as they have dex to other stats conversion skills and they can stack.
For PSO2 New Genesis expansion, mag becomes cosmetic only. So whatever mess you made to your mag doesn't matter. Play whatever class you like...
Just watch some youtube videos or read guides on what to feed your mags.
