The projection screen should become an interactable on that slide. Walk over to it and interact with it in order to put the info into the journal. Up until that point, the game usually auto-logs things Norah comments on, so it's weird that this one needs to be manually interacted with.
As a note, the final projector slide works the same way -- if you continue past the end of the tidal slides, past several blank slides, you will encounter a 'flipbook' of cartoon-Norah jumping into a puddle of ooze and turning into a cartoon-creature. After stumbling upon that, I found it REALLY strange that Norah didn't comment on it -- which led to internet-searching, which led to finding out it's connected to the "Not Another Boring Slideshow" achievement, which led to learning that one needs to manually interact with the screen (although I still don't think she reacts strongly enough to the slides), which led to guessing that the clue->journal-entry worked the same way, which led to confirming that it does.
EDIT: I also started the chapter over when I got stuck on this and did what i suggested and worked with no problem.
I was missing this journal entry and had to use a guide to get thru Chapter 3. I replayed the chapter and went thru the slides, both several times, but still no luck. I read your post when I was looking around the organ and went down to check the slides again. This time the slideshow was at the end of the show and I clicked it backwards. Then Norah said "I think this is the right one" and I could interact with it :)
Thank you for this tip. I was about to give up.. It must be some sort of bug, as mention I have done this several times.

> seeing the tide meter in person
> returning to the slideshow
It's a very long way to walk, but that was all that worked for us.
