The original is more epic in scope, and more ambitious. The remake is safer but it's also a less jarring experience in places and shows more maturity, at least for a game that has you blasting a cathedral and racing hotrods. DE, whatever you think of it, is better than the rest of the Mafia series except maybe for the original in some ways, and it's easily one of the best crime family games period.
Eventually, the music licensing was "fixed" by replacing problematic tracks. I don't know if the pinups were licensed either, they may have not been. There's far worse content on STEAM, rape simulators and so forth, so I can't say if censorship really is the issue. Maybe it is, I don't know and haven't bothered to look into any of that. When Mafia came back to STEAM, though, as I recall the pinups were all switched out to generic magazines. I remember there were some complaints about the morality of the pinups, but come on. I'm more prone to believe that they may have been used without proper permissions. As a visual artist myself, I absolutely hate when that happens.
