Odd, because the Scarwood Bark has been checked off - although I still keep getting paid for it...

As stated above, this is a continuing quest. Each time you return with right combination of ingredients, he will buy them. Then it will restart again. At this point you might have enough scarwood bark collected already to sell for next batch, but not enough Tindertwig. Remember these are ingrdients for a reciepe, so you need right combination to sell.

I understand, just find it odd that there are checkboxes for the three different items and that one has been checked off, assuming that means that the conditions for Scarwood Bark have been met overall even though he seems happy to buy more.

Just curious as to if/when the others will be checked off in a similar fashion...

Try this, if the box is checked for scarwood bark and not tindertwig, don't collect any more scarwood bark, just tindertwig. When you have enough tindertwig for his reciepe, the box should show a check, sell it to him. Depending on how much scarwood bark you have in inventory, you might have to repeat this process a few times, but at some point the box for scarwood bark wil become unchecked, because you do not have enough in inventory for his reciepe.

If you are trying to get this quest off your quest list; You can't..

It's a continuing never-ending quest, and I wish the devs had placed them into their own unimportant catagory at the bottom, or given us section of the quest list to place them in where we don't have to see them bothering us all the time.

This is one of those (annoying in my opinion) endless tasks that will never be completed. It will keep renewing in your quest log no matter how much of each reagent you give him.

I wish they had not made endless quests like these.

OK, I'll just make a note and ignore - presumably the armband one and peasant clothing one are the same...

The Freeman Armband and the Peasant clothing are also endless tasks. They never end, no matter how many armbands/clothes you give the respective NPCs.
