What Splinter said is very true. The core of the game is managing risk correctly. Sometimes a very risky action succeeds, sometimes a very easy action fails.
If that can make you feel any better WakWak, everyone who has played this game for a significant amount of time has felt angry about that at some point or another. It can be a frustrating game, but for what it's worth, personally I also can't think of a game that made me feel such a rush of joy when things went my way.
Also, I don't know how experienced you are with the game OP, but if you're a beginner or you haven't played in a very long time, humans are actually a relatively tricky team to play in the long run. You will have to deal with teams who are faster and teams who are stronger, and teams that do a bit of both quite well too. You could play a bunch of games with other teams to get your sea legs back and then get back to humans, if that's the team that works for you.
Everything you are complaining about, is what has made it popular for the last 30+ years. Maybe this is not the right game for you.
I got over 500 hours of playtime in Bloodbowl 3 now and around 700 hours on Bloodbowl 2.
I'm maybe just tired of loosing built up players without any effect, loosing players that I just bought and loosing those players nowadays to just cannonfodder of Vermin flooding the field each and every turn on so many matches.
I really like creating heroes and had some really epic moments, especially when Halflings turn the match at the last turn by being heroic Kamikaze-Halflings. But that did not really comphensate the amount of frustrating moments where my Humans, Dwarfs, Lizardmen and Treemen got beaten up and murdered by little critters fouling like there is no morning.
I have no power left in me to create another team to fall for more creepy diceroll-matches where I can just maneuver as long as I don't throw a dice and watch all those who should fall to low Armor make my team disapear with my medium Armor without taking any injury. It might be luck, but it is just an frustrating time for me.
And that is the most important point of it all. I'm playing like an half hour to an hour a match. If this time is filled with frustrating moments, which are the most parts in my experience, then no matter how I like the artwork and immersion, I'm having not enough fun in regard of the time I'm investing.
I mean, if at least the fallen Champs would get some recognition, so that a team feels like it had a history, but no... In the end, your team looks like a brand new one with some weird veterans who can't pick up a ball. I really don't like that picking up a ball with nobody around is kind of a skill, when you just stand next to it.
So, I have to remind myself each time I get the urge to join the game what lies before me. A bunch of horned hard hitting and too-ugly-to-hit Chaos-Players, Orks (well, nothing to complain here), Dark-Elves (well, whatever), One-Turn-Touchdown-Rats and the most hated newly brought in I-Can-Do-Whatever-I-Like Underworld-Vermin.
Had some fun time, but even when it is all going too well for me I feel bad for the opponent having a crushing time every moment they try and fail in a row. I'm just not badass enough, I guess, and that's ok.

orks is orks and will always be a bash team
you can prevent one tuner rat with your defensive formation and underworld are just straight busted and should be nerf , they should have never been release in that stat imo.
Have you tried playing the game in a private league setting ?
