Hello,
These icons indicate the type of mission.

Red exclamation mark = main quest
cutlery = food drop
ammo = ammo drop
plus = medicine drop
claws = monster hunt
arrow up = stay at the base

You can also press the "T" keyboard button on any mission (on the missions list) in order to get more details about it.
