The blue bar is fatigue. The lower it is, the more you need sleep. If it empties out, you will fall unconscious. (or so the game says in loading screen tips, I've never let it happen)
Hunger and stamina are on the same yellow bar. The hungrier you are, the more the yellow stamina bar will fill in from the top with orange, reducing your maximum stamina.
I don't think that being unable to save during the tutorial is a big problem, you don't need to do any of the tutorials, so you can pretty quickly rush through to wherever you left off. I would know, because my headset happened to brick itself while I was taking it the first time, just short of the end, and I had to redo it.
Off the top of my head, one bit of information that I would consider important to add to the tutorial would be that most weapons (I think every weapon that can't be holstered at your hip) must be held with both hands, or else will suffer accuracy penalties, regardless of what your laser pointer or sight says you should be hitting.
