My personal favorite is the Scavenger mod, which limits the player to only the guns and ammo they can find in the field. I've heard good things about the STALKER mod, too, but I haven't tried it yet.
I also enjoy the mods that alter the amount of enemies like Warzone (up to 6x the enemies) and the Jogging Dead, which changes all the enemies to seekers and ups the count - like a zombie movie.
Besides those, there's a ton of smaller mods that tweak the game, make QoL changes, and alter various skins.
