The best solution though is to practice and use the Effect Modes to keep a static speed as listed above, and to stall with hold and rotating pieces to give yourself extra time to think.
I'm not sure how often it happens, but every few levels there will be 30 seconds or so when the game does speed up like that (in that mode) as kind of an extra challenge. I don't think there's a way to disable it (other than playing in a different mode, perhaps). I'm decent at dealing with them now after a lot of practice, but if they stress you out I would suggest kind of abusing the 'spin' feature, you can really make it hover and re-place it for a long time in this game. Combining spinning with using the swap/storage slot during those moments should help a lot. :)
