How to find the Soap Box race with Mario

So i was flying around the area of Montana/Falco, and stumbled upon 2 Soap Box carts. One had Mario in, and you are able to drive the other.
When you enter your cart, you and Mario will both start driving down the hill (like a race).
A score board will appear, and the aim is to drive/ride the cart for as long a distance as possible.
I found this amusing and thought it would be nice to share with everyone.
