he is from scotland where most people, (I think), are christian. But it really wouldnt matter in a gameplay stand point but it might offend some people considering he is always drunk.

Yeah, it's as plausible as Heavy being Jewish, due to the fact that Muslums are a minority in the UK/Scotland or Ireland (Which is which, I can't remember...), but not non-exsistant. It's possible, just highly implausible, and utterly pointless, from a story or gameplay perspective.

I guess the author is asking this because of some oriental stuff used by the Demoman. But he's black and scottish. Not arab and from saudi arabia. As you can see here, http://www.teamfortress.com/war/demo/images/02.jpg he and his family don't really look like dressed like regular muslims!
