You know, a real life Portal Gun wouldn't be as useable as it is in most videos

In order to place a portal on a surface, it must be flat, white, not be moving (except from side to side, apparently) and be at least 1 metre wide and 2 metres. You also can't just get rid of the portals either (unless you have an emancipation grill with you)
I dunno about you but I don't ever really see all that many places that fit those criteria

when in ruined Aperture in the offices, you can place portals on several surafces - you can also place several portals on various surfaces when trying to escape in Portal 1. Also every test in old Aperture BEFORE they start using Conversion Gel

I only recall it being stated that moon rock is simply a great surface for portals - that it's a good 'conductor' - not that it was the only valid surface
