I also am wondering the same. It's not SteamWorks related - as I already am enrolled in SteamWorks.

Is there some kind of Unity developer's guide? There are lots of interesting scripts in the Unity package, but fom the code it is hard to tell how to use them.

For example the GazeTracker script, should I add this to the camera rig, to the camera head or eye or to an object I want to be tracked? And what happens when I am gazing at an object, should I just check for isInGaze or do something with events?
Likewise for the LaserPointer script, a lot of parameters, but what should go in there?

Yes, is there a general guide to using the unity SDK C# scripts, a set of templates for getting access to the controllers?
