Doesn't sound like it can only harvest its favored thing, more like it will have an increased rate of gathering that particular one, while retaining default values for other harvestables it has access to.
So if a blank one was to get, say, 10 raw and 1 prime, a prime-trained one would get 10 raw and 3 prime, or something along those lines.
That's how I read it, anyway.
Plus, even just having something that harvests both plant and animal matter is a new convenience, this sounds like a fun little thing for lazy people such as myself.
....or you could just tame more than 1??
The thing is, it's probably not gonna harvest things as well as other dinos. For example, I doubt it harvests as much wood as a beaver. If it doesn't have the ability to get the harvesting buff on everything, then it doesn't sound that useful, unless you're just starting out.
Still too early to speculate or assume either way. You may very well be able to train it to gather more prime meat than a rex can get, for example. In that case it would be extremely useful for someone who doesn't have a giga (I dont have one but I am assuming they gather more meat/prime meat than a rex).

And for those wondering, that's pretty much what all large Permian herbivores looked like more or less. They were kinda fat and stocky looking.
