I highly recommend Blockland.
There are always busy servers online, although there are less when it is nighttime in the USA.
As far as racing/zombie servers... The types of servers seem to come in trends/waves. For example, somebody might be hosting a zombie server, and then a bunch of zombie servers might appear. The next day the trend might be TDM or jailbreak or trench warfare servers.
However, there's normally a pretty good variety. Of course, you can always just host your own server as well.

Blockland has a thing called "events" wich you can use to prgoram in a way, you can probably find something on youtube for it.
the gameplay in blockland is more reminiscent to gmod, as it is a total sandbox rather than minecrafts survival aspect
EDIT : And no i may not own the game on steam, but i've played this game like crazy back in the day.
You know that you can transfer your blockland key to the game on steam right?
