Screenshots taken using the Assetto Corsa screenshot interface are saved here. By default they are in jpg format.

\Documents\Assetto Corsa\screens

Simply use your Steam shortcut by default for making screen captures (F12) and when you exit the game, or change window thanks to Alt+Tab, you will see the screen captures window. There's a button "look in folder" (I don't remember the button's exact name). You will be directed to the screenshots folder and you can move or copy the images into your favourite images folder.

They are already in jpeg I think. For any doubt, you can use Gimp for converting the images and much more.

It appears after you've taken your first screenshot. If not, then create one. But it is better to use F12 through Steam, to take screenshots.
