Advice for fishing
What is the optimal method for fishing? Does building on lakes, rivers, or streams effect production? Is it just random? I've had some success with fishing, so I think it's still viable early game.

The coverage of water effect the amont, education of the fishmen, tools and if some another fishdocks are in the same coverage have effect.

1-2 fisherman per dock avoids overfishing problem and 1 fishing hut per lake/river (fishing is much more of a way to get many different foods which helps towards health its not the best way to get food because you cant have 4 fishermans without doing overfishing and then reducing the income in future years)

I produce every foodstuff in the game, at around 500 population I had 6 fishing docks spread our across the main river (that is connected to 2 lakes) in my game. They make quite a bit when educated, steel tools etc
I haven't encountered this overfishing problem you mention. I have 3 on one lake and 6 on the same river. I made sure none of their circles overlap.

I currently have 6 fishing docks (5 along the river, 1 next to a lake) and the ones at the river fetch me ~1200-1500 fish per season. The one at the lake gets me ~1000. I've had over 20000 fish in stock for decades now. Seems to work well enough for me :)
Your town must be sick of fish if it just sits there. I would be more worried that you have a 20000 stock of fish that isn't being eaten...
I'd get most that to the trading post and trade most of that for stuff you needed.

nah, 20k fish will save you on a bad day, which can hit very quickly and viciously. It's horrible when production rates diminish. There are many factors affecting productivity that new players are not too aware of: health, happiness, tools, clothes, commute, frieght transit time & climate[?]. I am not too certain of how a harsh climate can affect productivity other than by longer winters.

Rotten fish also glow (no idea why so don't ask) early coal miners would take fish instead of torchs to avoid explosive gases. > maybe these rotten fish are used with the tunnels?

Fish has been one of my biggest trading sources, but I already have every seed and livestock, so it's just piling up in my barns. Or maybe my people are so sick of fish that they refuse to eat them anymore :D

In all seriousness though, they get to eat every sort of thing out there, but as Knight Lazarus said it's nice to have such a big surplus. I think fishing huts are great. As I said, averaging around 1300 fish per hut per season. Their biggest advantage as far as I'm concerned: they don't take a lot of room, which is awesome. Make sure the circles don't overlap and you'll start your own fish emporium.

Just make you have plenty of water coverage and that no obstructions are in the way(eg: bridges)

I don't think bridges cause any problems. Three of my huts are right next to a bridge and still get to 1500 fish.
