I have 12 cookers 2 sinks and lots of fridges about 15 to 20 if you see product on the floor then not enough fridges. For 230 prisoners. With about 30 cooks.

Try a two-hour meal block in the mornings and evenings so everyone gets fed. Build a yard right alongside your canteen and schedule yard time right before, so they can just walk in when the dinner bell rings.
Also, if you've got your canteen outfitted with TVs and bathrooms and prayer mats, they can also satisfy a bunch of other needs during their meal block.
