Considering you have good hardware I don't think DE's will affect that much on performance, maybe 10-20 fps or so. A good choice is KDE where you can disable it's effects while full-screen programs are running and it's all done automatically.
I like Linux Mint Cinnamon, but I also like openSUSE (KDE, XFCE), Ubuntu and it's forks.

AMD 965, nVidia 650ti, 16GB PC-1333 (I do NOT recommend ATI GPUs for Linux; they're great for Windows, but nVidia is a better choice for Linux users, regardless of Linus' rant.
Debian is fine for gaming. I have the same FPS like I had on Ubuntu and Mint.
