To get ovr 60 FPS you need to disable vSync in Compiz Config Manager, and from your graphics driver settings. In order to help you more please post your System specs. :)
I'm totally new to linux (kind of, the last time I tried it was 10 years ago or sth. like that, and I wrote some shell scripts during my studies, but never really used it ^^), so I'm having a bit of a hard time. I'm currently looking where to find the Compiz Config Manager and my graphics driver settings ;)
I'm running Ubuntu 12.04.1 LTS on this system :
Intel Core i7 2600
nVidia Geforce GTX 580
16 GB RAM
I forgot what exact Motherboard I got... MSI P8P67 LE if I remember correctly.

When I already got a linux geek here, maybe you also have a solution for this :
No matter what output device I select under my Sound settings, I can't get it to put the sound out of the back (=mainboard) port of my PC. Only the top port of my case works, but for 2 different audio devices (headset and analog output). HDMI out works as well. So currently I'm using the Workaround by passing it from HDMI to my TV to my Stereo. However, there might be a loss of Sound quality that I don't want to have.

But I also have the issue with fps being locked to the screen refresh rate. I'm pretty confident I have vsync/vblank off. It's unchecked in NVIDIA X Server Settings.
The answer is gl_vsync 0. It's 1 by default.

And yeah, fps and physics - I remember good old times whenI could run faster than others with my crappy laptop and 30 fps, but I couldn't climb this tiny wall next to the exit of the tunnel on de_dust2 xD Or walking up the wall at the ct-base on de_nuke also wasn't possible xD
I'm surprised a bit that you "only" get 200-500 FPS. I have the same hardware and without a frame limiter I get over 1000 FPS in Quake 3.
You can buy CS1.6 and Half-Life for exrtremely cheap..
Half-Life I believe is 10$, CS1.6+Condition Zero+Condition Zero Deleted scenes is 10$ as well.
That makes no sense. I get 300-400fps with fps_max 1000.
