Can't save or delete saves...?
Just coming back now, want to finally finish this game before moving on to 2 and 3. I have 3 saves one of which I want to keep, 2 I would like to just erase.

So i delete the two saves I want to erase, start a new game. Get to first bonfire, quit game, start game again and everything is back to the way it was when I first started it (e.g. I get the deleted saves back, lose my new character)

What do I do?

Maybe Steam is replacing your local save with the ones saved on cloud.

Seems like it's something like that yeah, but what can I do about it? Seems like it's not synching to the cloud, only from the cloud...

If you don't mind using your local files only disable steam cloud for Dark Souls.
library > Dark Souls: Prepare to Die Edition > properties > updates

I'd rather be able to have a backup of my files on the steam cloud.

Also check if your anti-virus is blocking the application from accessing that folder if so enable application in your anti-virus. This was the case for me with Bitdefender.
