wild dragon encounters while riding dragon, giving you either the chance to fight them or flee but fleeing causes a prestige hit while killing the dragon during a dragon duel gives you the skull and possibly a nickname like "Dragonslayer" or "Dragonknight"

How about an event that allows the small dragons of members of the same dynasty to train together and have a temporary modifier for fear, size, fire, health, etc.

I'm not sure if possible, but maybe if you ride together with your spouse and both of the dragons are female and male - maybe they could become soulmates to?

Add the possibility between rivals to challenge their rivals on the back of a dragon (like Daemon and Aemond)

how about an event where you can ride dragons together with your kids? Some targ ancestors were known for even taking newborns on flights with them.
