I never had that happen, both Wario Stadium and Royal raceway were 2nd tries for me so I was kinda lucky, Bowsers castle on the other hand had a good 5 or so retries.
My first attempt at Wario had everyone crash at the first set of bumps, including myself on a stray hog, and then like 3 or 4 racers managed to avoid the crash got too far ahead to catch up to, so maybe that kinda BS is more common than I thought.
My first attempt at Royal Raceway had both ramps flip forward where on the first flip I knew it was lost but wanted to try another shot at the ramp which also flipped, on my next run the first one flipped forward but I managed to claw back into the top 3 before the second one which tilted back for some reason and I just drove to the end from there, the AI obviously cheat here becasue they never failed the ramp (or atleast their path over the ramp is the one perfect way to do it)
The whole enemies skipping was due to the explosive physics impulse on the hunter's cannon, he shot...i dunno, another racer or the ground in the middle of the pack and everyone went flying.
On royal raceway by the time i reach the ramp there is only ever 1-3 other AI racers there, because again, the freaking hunter sends EVERYONE FLYING, even saw a pair of Elites get flung into the water, it felt more RNG dependant because johnson cant shoot for crap than the ramp personally.

I only ever had the flood launch anything (that I saw) and mostly they sent me flipping off my car at the start of Boswers Castle
The issue with how CE is laid out is it is impossible to do otherwise, alternatively you can skip the campaign missions thanks to how the MCC works but i got the hang of them quite quickly.
Except when everything explodes 3 seconds in, that....no skill can accomodate. But gets a laugh out of me.
I played Royal Raceway for an hour. It was 5 am. I decided to sleep.

Also, it's unfortunate that a level pack that wasn't even shipped with the Original Cursed Edition got ported to MCC before the multiplayer levels did.
I hated that one even more
The vehicles are exact same speed only allowing for overtaking during crashes at the beginning or minor gains on turns. If you're not in the lead after the first few turns, you cannot get in the lead by any amount of driving.
At one point I thought I was meant to get out of the kart to kill the others, but that didn't work either.
