Difficulty finding Accessories
Me and my friend have been doing a playthrough the past couple days, we're now a little bit into hardmode and we have not found a single pair of hermes boots.

Is there a new dedicated spawn location for them? Or are we just THAT unlucky

Yes, there is infact a dedicated spawn location, remnants moves around a lot of stuff between biomes and structures. Hermes boots can be found only in the marble cave. In case you haven't found that one, it's right below spawn on top of the lava layer.
