A few more ideas would be to add a varangian and a knights estates, that could fight each other based on their influence and loyalty, and maybe their privileges.
Maybe you could also add an option to buy ships from the Genoes of galata, at the flight event tree, for a hefty price, for additional supplies. Maybe even try and take some of them with you, like Giovanni Giustiniani's company maybe. Also you could add the option to visit the Komninian Trapezus and Georgia, or even the crusading state of Cyprus. Though I don't know what exactly they would give you yet, as I'm just throwing ideas seeing if something catches your interest.

Christ when chosen as a personal deity would apply buffs to Christian provinces AND former Christian provinces (the ones with the local modifier mentioned above upon conversion)
Secondly, assuming Orhan is taken on the expedition (and the city isn't left to him), there ought to be a supplementary decision to hand over Constantinople to the Komnenoi in Trebizond (which would then be allied / guaranteed by Hungary). Assuming Orhan is left to defend the city and bid for the throne, maybe an event chain could fire to draw together an alliance of the Turkic Beyliks against the Ottoman threat. Also, a small black sea flotilla (from Trebizond & Theodoro, upon hearing of the handover of the city) could join and add a small amount of supplies and combat power to the fleet (possibly adding an extra barque or two upon landing in America).
Lastly, maybe add an option to only take on half the supplies in Sicily? Maybe the FULL allotment of resupply would grant 2 levels of supply to the expedition, and the half option could grant just one?
