I know this isn't even SLIGHTLY historically accurate, but do you think these would still work on base game CK3 if I add the tradition to my culture? Haha

Dorne is loosely based on Spain and the Moors....maybe a Sphinx.

For the Riverlands - perhaps some kind of nymph/fairy? Seeing how they have rivers and the like.

For the Reach - perhaps some kind of ent, treeman, dryad?

For Dorne - perhaps some kind of mummies? Ancient buried dynasties from the times of the First Men?

For the Faith of the Seven - unsure if they would fall under 'mythical', but perhaps Paladins?

Agreed. Maybe with things like Weirdwood Crones with Riverlands or something, or any fantastical creatures in general, it might be simpler to just ban the Faith of the Seven variants from accessing them if you want to go that route. But then again, the units do exist at the last upgrade in the House legacy and it takes a while to get that (unless you can cheese that fast or just debug it). If you were to imagine that in a lore, it could be the house members discovering their ancient house secrets that allow them to somehow communicate and bond with these creatures, just as Valyrians did with dragons.Of course, you could just make it so that the Faith of the Seven HAATESS these creatures, costing you a fkton of piety upkeep on top of influence for having them as your Men-At-Arms regiments.

Werewolves? Okie dokie. Vamps and Werewolves throw off Westeros but whatever floats your boat. ;)
