How to enable / disable UI.:
Without changing your controls, you can press the ; key to enable / disable the UI.
If you'd like to change the keybind, you can do so in the "Modded" section of controls.

For some reason, sometimes when I have the game on pause I can´t disable the UI and have to turn on time again to make it work. This is a pretty annoying bug ánd I don´t know if anyone else is experiencing it.

This is partially a feature in the main game. There are still some UI you cannot hide with it.
It can also hide the main menu UI, but that's not really important.
