With Notepad++ all you will need to do is to press CTRL + F for find, click on "replace" there will be two text boxes, "Find what" and "Replace with" then neck just click on "Replace All in All Open Documents"
Doing it this way using Notepad++ is much quicker than editing each individual .sii file with regular notepad.

To answer that question.
The .sui files are located within "def/vehicle/transmission/" from which holds several .sui files for the transmissions.
For the .sii files from which are located within "def/vehicle/truck" the .sii files only hold information about the differential ratio and they all have pointers to a certain .sui transmission that is located in "def/vehicle/transmission"
The idea of having this file setup was similar to how LoadedSaints does their Real Eaton Fuller Transmission mod, from which can be found here on the steam workshop.
