Wow, this video really misses the mark. you really didn't mention a lot of elements that are critical for farming.

As far as ideal field size, there's really no point attempting to optimize how many fields you get compared to how many workers are in the field. If you want to work fewer people for the most field, try a the largest field you can make and put only one worker in. Not sure why you'd look for that, though, that's not efficient.

Year ~50 and on, able to harvest potatoes 2 times fully in a year. Year ~200, able to harvest potatoes 1 time or even less in a year. Steel tool, education, farm lot size, and home distance present in year ~50 as it was in year ~200. What can possibly cause the change in planting/harvesting rate?

@Erke When you are making the 21x13 farm, it is 3 construction workers, not farmers. Once the farm is built, you'll see that you can have 2 farmers working on it.

According to this table 21x13 is the most resource per tile with 2 farmers... But when I try to create a 21x13 or 13x21 farm the worker count increases to 3... Is it because the table is outdated or am I misreading or calculating something wrong?

According to your field chart, 10x19 is the largest field size for one worker. What would be the most efficient field size assuming you have your other buildings (house, barn, well, etc.) placed properly.

In other words, what would be my most efficient farm size for one worker per season without telling the farmer to manually harvest.

Select grass and click OK and set your villagers to work the fields to produce hay. You can also gather it as well, but you won't get as much.
When starting (early spring) Take note of the crop requirements with regards to temperature and speed of growth as it's also dependent on the type of crop you grow along with the temperature and also the speed it grows at.

To maximize the eficiency of your of your fields, it is recommended to design your farms considering the amount of farmers used in the field.

For 1 farmer, the maximum field size is 11×17. It will produce 540 Potatoes or 405 of any other crops with only one time of harvest.
For 2 farmer, the maximum field size is 15×18. It will produce 832 Potatoes or 624 of any other crops with only one time of harvest.
