The highest difficulty of AI can be easily beaten by spamming R around the ball to hold it. AI will hold the ball in preparation to kick it, so if you manage to hold the ball before they can kick you will prevent them from scoring and they'll often end up getting a foul.
It ends up looking something like this leaving you free to score.
