From my experience, there's four types of fish on each planet (except one, you'll see why), three normal fish in increasing difficulty and one Predator Fish (Shark). Otherwise I think it pulls from a separate loot pool for treasure. As you go farther in each planet the fish get harder to catch. Also, if you haven't already, there's a free DLC, which would mean more fishing spots.
I had more enjoyment fishing throughout the game than at the end for the achievement (Master Fisherman), but that's a matter of preference. I'd also like to warn you to make sure you 100% the first part of the last world, as from what I can tell you cannot go back. If I'm wrong, feel free to correct me.
Lastly, thank you. I'm happy to see more research done into the mysterious fishing mechanic.

& then test the other spots. already on Gaia there are two other fishing spots, cause you can catch the Shark Type only once.
i will try to fish in that spot 50 times & see if i'll catch Jaws there.
