How to Increase FOV

1. You fist need to access the in game console (click ~ by default) .
2. Type "fov X" (X is desired FOV value) and press enter.
3. Press Esc and game will be at desired FOV

Alternate Method
There are reports that sprinting will reset this, so you may want to edit the Skyrim.ini file to set FOV.
1. Open the Skyrim.ini, scroll down to where it says [General]
2. Then at the bottom of this section, add fdefaultfov=X
