About the limited stack size: You can stack up stackable cargo higher as long as the spot next to it is occupied.
I.e. take two packs of ceiling components and stack them. If you try to put a third one on top, it will not work and the game wants to put it in a free spot next to it. But if you put any kind of cargo at that spot, effectively blocking the lower cargo slot, you can stack it up another row, and with the HS7S you can add a fourth row to that as well.
I've put every material you need for the museum extension onto a single HS7S trailer, it was filled to the brim.
