Yes this is the way to avoid all damage done by bethesda's broken patches, rolling back so basically nothing happened.

Also many promote how to avoid updates, you can do that until it is forced by steam, then the only way it won't be updated is if you are offline without internet. To be 100% safe also backup game files manually and then version rollback mods can be used like this one which has over 1m downloads:

Well, it was going great until you downloaded SKSE and didn't actually say what version and the video was so out of focus I couldn't see it. The video cleared up when you had your SKSE properties open which also didn't list the version so, I guess I can try to match it up with the launcher date...
