List of Hats
Mercenary
Hat: Rakish Leatherbrim

The black and white colours mesh well with the theme of the suit. Its main contender is the "Reikland Griffonplume", which shares the same colour scheme and additional white details, but is generally less impressive and lacks volume. While removing the hat altogether using the "Veteran Scars" sounds like a good idea, the lack of an upper offset to the powerful colour scheme of the lower suit makes poor Kruber look like a half-stripped stormtrooper.
Rating: Average

Huntsman
Hat: Soothsayer's Skullcap

The white skull with its grey horns is a perfect match to the purified white hunter garb.
Rating: Great

Foot Knight
Hat: The Veteran

The helmet-less Foot Knight looks great in any armor whatsoever, white variant as well.
Rating: Great

Grail Knight
Hat: Hippogryph Helm

Grail Knight owns 3 helmets in total, not including the shark hat. While the white armour itself is not bad, its red details don't mix well with the yellow tone of the helm: and it's even worse when paired to the blue colour scheme of either the "Helm of the Worthy", or the "Pureheart Helm".
Rating: Poor

Ranger Veteran
Hat: Skazkald

Ranger Veteran sports many choices in suitable hats, mostly because his white garb sports many darker parts that mix well with darker helmets. I've only selected this one because it meshes seamlessly with the suit underneath, looking like a single piece of clothing. Alternatives like the "Kladkap", "Orrudklap" and "Goruzklad" are perfectly viable, if you'd like additional metal accessories. The wool hat "Karakiaz Chufdrongol" is equally charming.
Rating: Great

Ironbreaker
Hat: NONE

There are no suitable helmet counterparts to the white armor of the ironbreaker. For most of them, the metal is simply too dark: with a minority looking golden, like the "Gungasti" and the "Zulunbiakaz Nairikkit". Only the "Galar Konk" would seem to match the colour scheme well enough, but alas it is only usable in the Modded Realm.
Rating: Terrible

Slayer
Hat: ANY

With a preference for the "Nadok", as to say Bardin's eyepatch. A Slayer's skin is made of unintelligible tattoos and trousers, so mix and matching different hairstyles to a pair of white pants isn't really that hard.
Rating: Great

Outcast Engineer
Hat: Cogboki

Another class which suffers from extreme lack of variety in hats. The "Cogboki" is actually an upgraded version of the default hat, the "Outcast's Skullcap": which you might find the superior choice, in lieu of the fact its gold details are less pronounced. The only other alternative being the "Boki Smedniri", a metal mask which comes with a terrible pink bib underneath, you really don't have any better options.
Rating: Poor

Waystalker
Hat: Aspect of Adanhu

The biggest draw in the Waystalker's white armour, are the (brown) wood bits. They simply cannot be balanced out by any other of the hats: you need a wooden hat for the job. And guess what, it works great: she actually looks like a possible enemy npc.
Rating: Great

Handmaiden
Hat: Crown of Lileath

The snow handmaiden is one, if not THE best among the new purified skins. It's already marvelous using the default hat, the "Protector Circlet", but becomes a completely new character once you add one of the hats which replace the hood with a white balaclava - which was previously a terribly bad idea. For a cheap alternative to the "Crown of Lileath", you may buy a "Wingshield Helm" which is most similar.
Rating: Great

Shade
Hat: Shadow Mask

The white assassin suit looks off altogether, and your only available hats being either dark or golden can only make this effect worse. My suggestion is to keep the hood on, and go for the few alternatives that add a facemask underneath. The "Shadow Mask" echoes the golden detail on the rest of the white suit, but isn't completely perfect due to its darker tone. In alternative, you might prefer the "Filthy Rag" which is lighter but whose different colour matches even less.
Rating: Average

Sister of the Thorn
Hat: Bitterbloom Circlet

There's two white hairstyles available for Sister of the Thorn: you might pick between the "Bitterbloom Circlet" which is just a simple balaclava with white dreadlocks, and the "Eternos Crown" which also comes with wooden horns. But the latter don't mix all that well with the rest of white skin. Also you might be tempted to pick the default "Thornmaiden's Crown" because its green glow matches that on the skin, but rest assured the lack of white hair will make the rest clash pretty evidently.
Rating: Great

Witch Hunter Captain
Hat: NONE

All of Saltzpyre's hats are either too dark or too colorful to mesh with his new purified skin. Which, truth be told, is a weird mix of light and dark that's kinda off-key. If you're desperate for a decent hat, the most I could get you is the "Tyrant's Bicorne": you will still look like you're haphazardly superimposing two black and white skins, but at least the hat will partecipate on it and won't add insult to injury.
Rating: Terrible

Bounty Hunter
Hat: Purity Helm

This helmet sports a white headband which matches the tone of the rest of the purified skin. While not the ideal solution, it is a slightly better alternative than all other darker metal helms.
Rating: Average

Zealot
Hat: ANY

With a preference for "Sollekruz", a simple and unobtrusive head tatoo that won't distract from the rest of the skin. The Zealot's purified skin is one of the best, and you can't go wrong with either head accessories you go with. Tattoos are fine, colorful headbands less so but still viable: you may even choose Pigmar STILL and it would look good.
Rating: Great

Warrior Priest
Hat: ANY

With a preference for "Brass Wreath" or "Redemptor's Patch", both golden accessories with lots of personality but unconspicuous impact. The purified skin for the Warrior Priest is leagues ahead of most, owing to a superior account of details and great variety in hues. Even better, the hats or rather head accessories of the Warrior Priest are modest and well fitting to either the armor or coat parts of the skin. You simply can't go wrong, and even the boldest statements like "Penitent's Band" find their meaning.
Rating: Great

Battle Wizard
Hat: ANY

With a preference for "Flamekeeper's Torchgate", whose understatement helps focusing attention on the main body of the skin. It's safe to say that any of the candlegate accessories fit well enough, except maybe for the more outlandish "Memento Furioso", but there's no clear winners that actually improve on the effect as a whole.
Rating: Average

Pyromancer
Hat: Gilded Candlegate

The golden details on the candlegate enhance those from the rest of the skin, making it a powerful combo.
Rating: Great

Unchained
Hat: ANY

With a preference for hats which sport a lighter faceplate, namely "Kadra's Deathmask", "Crown of Glory" and "Mask of the Living Flame". Because while most accessories will agree with the rest of the skin, darker helmets such as "Witch's Mask" will look like they're fused to the upper torso of the main body: using lightly colored ones will create contrast and improve on the effect given by the white armor.

What's the Warrior Priest choice though?

the handmaiden already has a white skin lmao

tbh, on HM, I prefer either the default hood or Mask of the Chaste
The first make your HM all white, and perfectly fit the rest of the purified cosmetic. I just wished the face mask was white too.
The second is also nice as it fit the chain mail part of the purified armor. Burning crown is also nice for it, got some gold part that are ok too.
Your suggestion are good, but I don't like this "bald" look Kerillian have with them.

I'm 100% into bitterbloom circlet for SotT

I wish the tyrant's was actually as white as it is in the emporium, your only option is like you said.

I think the Vengeful Peacock and Tyrant's Bicorne are you best options with WHC. I think the gold trim and dark colour fit well with the shadows below the tunic
