Bush plants only survive in their own season and need watering for the bush to grow and bear fruit again.
Tree plants survive all year round but only bear fruit during their own season. No need to water after fully grow.
So, either kept bush plants inside the bunker with pipes or tree plants (the surrounding 8 tiles need to be clear for growth like fruit tree in Stardew Valley) for a year-round harvest.
